I think a lot of consulting companies hire Econ majors, Deloitte, EY Accenture etc…

Hey there, great degree! I studied Economics myself.
As mentioned by James, a lot of consulting employers have opportunities within economics. Check out Deloitte Access Economics for an example of the type of work economics graduates at conusltancies can do.

Another great employer of Economics grads is the federal government. In Australia they even have recruitment stream dedicated just to economics graduates which is managed via Dept. of the Treasury. Check out this job here: Australian Government Career Pathways Economist Stream Graduate Program
A good friend of mine started as an economics grad as part of the Services Australia program 2 years back and now is working for the Productivity Commission on economic analysis - so there are great pathways via the federal government.
